There is extensive evidence for the benefit of the Mediterranean style low carb diet, including cutting your risk of heart disease and diabetes. It has even been found to reduce risk the risk of breast cancer, compared with those on a low-fat diet. Consuming extra virgin olive oil (the fresh squeezed juice of olives) seems to be particularly beneficial when it comes to cancer, perhaps because it contains compounds such as polyphenols which are known to be anti-inflammatory.
The Mediterranean-style low carb diet approach, which we recommend in The Blood Sugar Diet, is a low sugar diet, low in starchy, easily digestible carbs, but packed full of disease-fighting vitamins and flavonoids. It is rich in olive oil, fish, nuts, fruit and vegetables, but also contains lots of lovely things that down the years we have been told not to eat, such as full fat yoghurt and eggs.
Some keto recipes also ask for xanthan gum as it works perfectly in gluten-free bread recipes. It will make the dough more elastic, just like gluten does. However, beware that xanthan gum ma cause digestive issues so keep that in mind if you are considering it. If you want to use xanthan gum, simply skip the protein powder and use a teaspoon of xanthan gum instead.

You can quit your usual go-to foods and start with the Atkins food list. The initial phase in the Atkins 20 plan is limited in food choices but focused on protein, fat, and vegetables that are low carb and not starchy. In each phase you add back food groups: first nuts, seeds, and berries; then fruits, starchy vegetables, beans, and whole grains. With the Atkins 40 plan you can choose from a larger variety of foods and carbs but still little to no starchy foods.
Research funded by an American company also found that some people with type 2 diabetes who followed a programme that included a low-carb eating plan were in remission after two years. Participants in the study were supported to restrict their intake of carbs, initially to less than 30g per day and then gradually increasing the amount, based on personal tolerance and health goals.
This will depend on several factors. Apart from the ingredients you use and the process you follow, even the shape and size of your bread loaf can affect the final result. On the photo below you can see that the loaf on the bottom is not as fluffy and well risen and two on top. That's the bread I made in a wider bread loaf pan and I also added the second part of the warm water too late (after all of the dry ingredients). This resulted in a less fluffy, flatter, more dense bread. It was still tasty though!

It's also important to realize that whole grain-based foods, like bread, are rich in complex carbohydrates and are a great source of energy to fuel physical activity, your brain and your nervous system. The USDA recommends adults make at least half of their grains whole grains. To be sure you are selecting foods high in whole grains, look for those with at least 8 grams of whole grains per slice. (Experts recommend eating 48 grams of whole grain a day.)
