If you have type 1, it's important to know that the best way to keep your blood sugar levels steady is to carb count rather than following a particular diet. And there is no strong evidence that following a low-carb diet is safe or beneficial, which is why we don’t recommend this diet for people with type 1 diabetes. But some people with type 1 have reported needing less insulin and losing weight from following a low-carb diet.

I don't recommend ready-made psyllium husk powder. I've baked dozens of keto breads and I made all of them using whole psyllium husks that I powdered myself. Ready-made psyllium husk powder is often too fine and makes any keto bread too dense, flat and heavy. Sometimes the bread would also get a purple hue and an ammonia-like aftertaste (although that may be related to rancid flax meal). Trust me, you don't want any of these in your low-carb bread!
If you've made keto bread before, moisture is a common issue. The reason it's moist is not the extra eggs or water used to make the dough — on the contrary, these are both essential for texture and for the bread to rise. The ingredients responsible for moisture are psyllium and flax meal (and also ground sesame seeds as opposed to fine sesame flour) as they will lock moisture in the bread. They are both essential in keto baking as psyllium adds volume and fluffy texture, while flax meal makes the bread taste more authentic.
The Mediterranean-style low carb diet approach, which we recommend in The Blood Sugar Diet, is a low sugar diet, low in starchy, easily digestible carbs, but packed full of disease-fighting vitamins and flavonoids. If you treat your diabetes with insulin or any other medication that puts you at risk of hypos (low blood sugar levels), following a low-carb diet may increase this risk. Speak to your healthcare team about this so they can help you adjust your medications to reduce your risk of hypos. Your team may also support you to check your blood sugar levels more often. 
In his early books such as Dr Atkins' New Diet Revolution, Atkins made the controversial argument that the low-carbohydrate diet produces a metabolic advantage because "burning fat takes more calories so you expend more calories"; the Atkins diet was claimed to be "a high calorie way to stay thin forever".[16][17] He cited one study in which he estimated this advantage to be 950 Calories (4.0 MJ) per day. A review study published in Lancet[18] concluded that there was no such metabolic advantage and dieters were simply eating fewer calories. Astrup stated, "The monotony and simplicity of the diet could inhibit appetite and food intake." David L. Katz has characterized Atkins' claim as nonsense.[2] The idea of "metabolic advantage" of low-carbohydrate dieting has been falsified by experiment in a study of people following restricted-carbohydrate dieting.[16]
I have made this twice now using almond flour, coconut flour and whey protein isolate powder only (so no sesame or flax) and it has turned out wonderfully both times, if a little flatter than yours. The second time I realised I had to powder the psyllium husks, though, which I had neglected to do the first time! I don't think it made a huge difference, though. The second time I also dehydrated the loaf in the oven after baking, as advised, for 30 minutes at 100 C, and it did help make it a little less moist, so thank you very much for that tip 😊 One more question, please -- if I use instant yeast instead of active dry yeast, what should I change? Should I skip the first step (dissolving the yeast in sugar/yacon syrup/honey and proving in the oven with the light on) and mix it directly into the dry ingredients? (I did read your note in the blog post that said this, but I just want to make sure, I don't want to mess it up! 😊 ) And will I still need honey or sugar or yacon syrup? Thanks again!
